Whole Duck Roast
- Thaw the duck in fridge for at least 48 hours
- Preheat oven to 400F
- Remove organs from duck
- Score the skin of duck on both sides (back and breast)
- Snip the armpits of the leg to let it better heat evenly
- Rub salt/herb mix all over
- Layer the bottom of roasting pan with potatoes and veggies if desired
- Breast side down, put in oven
- Heat for 45 minutes
- Lower heat to 350F
- Take the duck out, flip it to other side up, and then roast another 45 minutes
