Whole Duck Roast

  1. Thaw the duck in fridge for at least 48 hours
  2. Preheat oven to 400F
  3. Remove organs from duck
  4. Score the skin of duck on both sides (back and breast)
  5. Snip the armpits of the leg to let it better heat evenly
  6. Rub salt/herb mix all over
  7. Layer the bottom of roasting pan with potatoes and veggies if desired
  8. Breast side down, put in oven
  9. Heat for 45 minutes
  10. Lower heat to 350F
  11. Take the duck out, flip it to other side up, and then roast another 45 minutes
